About Zedo
What gums are called Persian gum? Plum tree (Prunus domestica L.) gum, Apricot tree (Prunus armeniaca L.) gum, Peach tree (Prunus persica (L.) Stokes) gum, Cherry tree (Prunus avium (L.) L.) gum, Sour Cherry tree (Prunus cerasus subsp. cerasus) gum.
Cherry and Sour Cherry trees often produce a gum called Persian Gum (Zedoo). This gum is also secreted from the most trees of the Rosaceae family, such as Prunus lycioides, Prunus persica, Prunus armeniaca, Prunus domestica, and Prunus cerasifera, etc. Its color is dark yellow, and its difference with Gum Arabic is that it does not dissolve in cold water. But when it is boiled, it changes and looks like Gum Arabic.
